설탕은 감미료뿐 아니라 식품 보존제로도 쓰였습니다. 이 당시 사탕수수는 설탕을 얻을 수 있는 것으로 알려진 유일한 수단이었으며, 초기에는 몇몇 지중해 섬에서 재배되었습니다. 하지만 카리브해 섬을 비롯한 아메리카 지역에 노동 집약적인 플랜테이션 농장이 세워진 후에는 주요 생산지가 대양 너머로 이동하게 됩니다.
